



Over our Thanksgiving holiday we had a Pizza Cook-off. There were three competitors--Ben, Jake(Necia's husband), and Nathan(Becky's husband). The challenge was to create two pizza pies...one healthy and one more traditional. I helped out in the kitchen as needed and the chefs put their culinary art skills to the test. I voted for Ben's Healthy Thai and Jake's South of the Border. But, each and every one had a unique flare--especially Nathan's finely sliced pears on the gluten free crust. PS Ben took home the trophy!
Healthy Thai Pizza Pie( in Ben's words)
Da' Sauce
Big Ol' Scoop of Creamy Peanut Butter
Dollop of Soy Sauce
Smidgen of Mince Garlic
Stir it up until smooth, add water to help consistency
You can add a few pinches or so of sugar but that's not so healthy
Use Da' Sauce to Marinate the chicken for a few hours. I cut my chicken into bite sized pieces and then smashed it (tenderized) with a big heavy metal stick.
Make extra sauce for the base of the pizza
Put these following items on top of the dough until it looks right. This is the order, don't mess it up.
Dough (premade from Trader Joe's)
Peanut Sauce
Mozzarella Cheese
Marinated Chicken (pre-cooked a bit, just enough so when it bakes for 12-15 minutes its still juicy and tender not all rubbery and nasty)
Diced Red Onions not too many just enough
Green Onions; Chop the white part and make long slivers of the green part
Carrot Slivers
Bean Sprouts, cut into bite size pieces
Put all that in the oven at 425 for 12-15 minutes or until it looks nice and brown
Let it sit and coagulate
Sprinkle Crushed Peanuts and Fresh Cilantro on top

Cut into squares or rectangles.
