This recipe is right up there with the Heaven-on-a-Plate-Brownies. It is from a book we read for our December book club. Too Many Cooks by Emily Franklin...I highly recommend it if you are passionate about food and passionate about teaching your children how to appreciate all food. I made this for our annual bookclub potluck and everyone agreed that it was soooo gooood. If you need a good chocolate fix...here you go.
Chocolate Pudding Cake
First:
2 C Flour
4 t baking powder
1 t salt
1 1/4 C sugar
4 T unsweetened cocoa powder
1 C milk
4 T melted butter
Then:
1 3/4 C brown sugar
8 T cocoa
2 c boiling water
Mix first seven ingredients and put into a 9X13 pan. Mix the Brown sugar and cocoa and sprinkle over the top. Pour the boiling water on top of the cake batter and put in a 350* oven for 30 minutes. When the cake is baked the top will look like a brownie and underneath will be creamy pudding. Serve over ice cream (I chose French Vanilla Bean).
