Last Saturday Ben and I took a little trip over to the Upper Klamath Lake for the day. It was a beautiful 70 degrees outside without a cloud in the sky. It was peaceful and the fall colors were magnificent. Ben doesn't usually agree to these kind of 'outdoors' activities without some whining. But when the day was through he did admit that it was one of the better adventures we'd been on. The Upper Klamath lake has a portion that is a National Wildlife Refuge. No motorized boats are aloud, and there is an awesome canoe trail that winds around the shallow portions. We spotted otter, muskrat, and a family of raccoons...plus tons of migrating birds. We launched from a cute little resort called Rocky Point.

Mrs. Lambie’s Christmas Cookies
Mix:
2 C Butter
2 C White Sugar
4 eggs
3 t vanilla
Sift:
6 C flour
2 t baking powder
½ t salt
Mix all. Let stand overnight in refrigerator. Pinch off pieces and roll out. Cut into shapes. Bake on greased sheet at 375* for 10 min. Yields about 50 average size cookies.
To decorate frost w/ thin powdered sugar icing.
